Tasting Notes
Aromas of crushed oyster shell, lanolin and toasted mallow. Flavors of tangerine, mascarpone, and peach blossom
Production Notes
The wine was pressed lightly to capture the fruit character and mitigate tannin extraction. Juice settled over night then racked to tank where it fermented at 58F for 1.2 months. when was allowed to age on lees in tank for 3 months.
Winemaker Notes
2016 was quite wet in early spring making conditions challenging in the vineyard. July and August dried out and we saw good ripening and flavor development in both reds and whites. Merlot, Cab Franc and Chardonnay stood out.
