Aging on the Lees
There are many wine terms and processes that we use and hear on a daily basis and they can be confusing! The term 'aging on the lees' is a great example of one of those terms that can generate confusion: aging on dead yeast cells? excuse me? sounds a little gross. I found the perfect article that explains this wine process, how it works, the benefits of aging different whites on the lees, and it's awesome!
